May cookie of the month: Mississippi Mud Cookies

With school ending this month, summer is on the horizon! Yay! That means it’s time for dipping your feet in a cold rushing stream and finding a log bridge for crossing. Ghost stories by candlelight on the porch, camping trips and family game nights, pool, and beach trips, and staring up at the stars. One of the best parts about summer is how you make it your own. Anything goes! And that’s one of the best parts of these cookies too!

Easy to make and fun to put your own unique spin on them with toppings, these rich, gory, chocolatey cookies are the perfect treat to get summer started.

Mississippi Mud Cookies:

Ingredients:

1 Box Devils Food Cake Mix

2 eggs

1/2 cup Vegetable Oil

1/2 bag milk chocolate or Semi Sweet Chocolate Chips.

Instructions: mix all ingredients together. Using a cookie scoop, scoop the cookies onto a greased baking sheet.
Bake at 350 for 7 minutes.

Toppings: This is the fun part!
Chocolate Ganache: If you’ve never made Chocolate ganache before, it will be your new favorite recipe! It’s perfect on Ice cream, cake toppings and of course, as the Mississippi Mude for these cookies. It’s also only takes about 3 minutes to make.

Ingredients:

1/2 cup Heavy Whipping Cream

1 cup Semi Sweet Chocolate Chips.

Instructions: Heat the cream until hot but not boiling in a heavy saucepan. Remove from heat. Add the chocolate chips and allow them to sit in the hot cream for two minutes. Stir until smooth.

Add a spoonful or drizzle of Ganache to the tops of the cookies and top with Marshmallows, sprinkles, Pecans, walnuts, or anything else that your heart desires.
