Brown Butter Coconut Krispy Treats: June Cookie of the Month

Summer is in full swing and these bar cookies will bring all the summer feels. If you love “come as you are” spontaneous summer get togethers with friends, Cotton Candy sunsets, neighborhood night games, soda shop stops, and relaxing on a beach towel by a sparkling pool, then these Brown Butter Coconut Krispy treats just might be your jam.


Ingredients:

1 bag mini marshmallows

6-7 cups rice crispies

1 cube of butter

1/2 tsp Coconut extract

Instructions:

  1. Spray a 9×11 dish with nonstick cooking spray.
  2. Open the bag of Marshmallows and set aside.
  3. Using a heavy saucepan over medium heat, brown the butter. If you are new to browning butter, you’ll see it go through a few steps as you cook it. First it will melt. Then it will start to boil and create large bubbles. Then the bubbles will become small and more like a foam. When you see the bubbles become foamy, stir the butter gently, watching for the liquid underneath to start to turn brown. You might also notice a nutty smell as the butter browns. As soon as you see the liquid begin to turn brown, remove from heat. (We’re trying to make Brown butter, not black butter:)
  1. Now add the marshmallows to the butter and stir to coat the Marshmallows with the butter. Allow the Marshmallows to melt, then add the Coconut extract.
  2. Stir in the Rice Krispies.
  3. Spread the Rice Krispies into the greased dish and allow to cook.
  4. Cut the Rice Krispies into squares and enjoy.
